Banana Muffins with Buttercream
So we had some rotten bananas and I usually hate rotten things but bananas are different because you have a excuse to bake. I used a basic banana bread recipe but instead of putting it in a loaf pan I put them in muffin tins.Here's the recipe.
2/3 cup milk
1 tablespoon fresh lemon juice
2 1/2 cups sifted all purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1 stick (1/2 cup) unsalted butter, softened
2/3 cup sugar
2 large eggs
2-3 very ripe medium bananas
3 oz walnuts, chopped (1 cup)
Put oven rack in middle position and preheat oven to 350°F. Grease and flour muffin tins.
Mix together milk and lemon juice and let stand until milk curdles, about 1 minute.
Whisk together flour, baking powder, salt, and baking soda in a bowl.
Beat together butter and sugar in a large bowl with an electric mixer at high speed until pale and fluffy, about 2 minutes. Add eggs, 1 at a time, beating until combined, then beat in bananas until combined. (Mixture will look curdled.)
Add flour mixture to banana mixture alternately with milk, mixing at low speed just until batter is smooth. Stir in walnuts. Scoop into muffin tins so it's 3/4 of the way full in each tin. bake until a wooden pick or skewer inserted in center of bread comes out clean, about 20 minutes.
Cool muffins in pan on a rack 20 minutes, then put muffins directly onto rack. Let it cool completely.
This is the same recipe from the vanilla cupcakes except for adding cream cheese instead of whipping cream.
QUICK VANILLA BUTTERCREAM FROSTING
• 3 cups confectioners' sugar
• 1 cup butter
• 1 teaspoon vanilla extract
• 1/2 cup cream cheese
In a standing mixer fitted with a whisk, mix together sugar and butter. Mix on low speed until well blended and then increase speed to medium and beat for another 3 minutes.
Add vanilla and cream cheese and continue to beat on medium speed for 1 minute more, adding more cream if needed for spreading consistency.
After spreading the frosting on the cool banana muffins,slice a banana and put a peice on top of each muffin,you can put lemon juice on each slice so it doesn't turn brown. These look great,and are tasty.
I also made some batter with some chocolate chips in it.
