Yummy Shortbread cookies


Okay so these are the best cookies to make if you want to impress someone, their easy and delicious.
Yummy Shortbread cookies
Ingredients
Makes 12 to 16
2 cups all-purpose flour
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1/2 cup confectioners' sugar
1 teaspoon pure vanilla extract


Directions
1.Line two rimmed baking sheets with Silpats or parchment paper. Sift together flour and salt in a small bowl; set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream butter until fluffy, 3 to 5 minutes. Add confectioners' sugar, and continue to beat until very light in color and fluffy, occasionally scraping down the sides of the bowl with a spatula, about 2 minutes more. Add vanilla, and beat to combine. Add flour mixture, and combine on low speed, scraping with spatula if necessary, until flour is just incorporated and dough sticks together when squeezed with fingers.
2.Remove half of the dough from bowl and put on a floured work surface.Preheat oven to 325 degrees. Roll out dough to a 1/4-inch thickness. Cut with any cookie cutter you got and place shortbread onto baking sheet. Scraps can be gathered together and re-rolled. Repeat with remaining dough. Bake until firm and just starting to color, 13 to 15 minutes. Cool completely on a wire rack before decorating.

Now for the frosting.
This is what I use:
1 egg white
1 lb confectioners sugar sifted (def not going to use it all)
1 tsp lemon juice
Large bowl
Handheld mixer with hooks or kitchen mixer with paddle attachment

Step 1:
Combine egg white and lemon juice in a large bowl. Add some of the sifted icing sugar to the mixture and start the mixer.
Step 2:
Keep adding icing sugar a little at a time. When the mixture looks like thick whipped cream and makes soft peaks when you push down the hooks/paddle in it, start adding spoonfuls of the sugar, then when it's really stiff put a few drops of water in at a time. Continue this until the icing it thin and liquid. It should be smoothing out when you lift the spoon. Then add any color you like. You can make separate bowls so you can have different colors. Then just put a small spoonful on each cookie and spread it out and let it dry for 30 minuets.
I would suggest picking up the neon dye from the market it really makes the cookies Pop out.
